We started making pasta in 2004 after purchasing a small second hand pasta extruder. We soon realised there was a considerable market for fresh pasta. In addition to this, Claire Bookham had previously spent seven years in Italy and was disappointed by the lack of fresh, quality pasta products in the UK. This prompted Bookham Cheese to become Bookham Cheese and Pasta and it is the long-term aim of the company to create a range of gourmet pasta that is able to compete with the very best of � Made in Italy�, without losing sight of the principles outlined in our mission statement.
