This is a by-product of the Twineham Grange Farmers' Hand cheese production and is made by re-heating the whey. Ricotta is a soft cheese with a relatively short shelf life and is used in the filling of pasta and can be used in a number of desserts such as cheesecake. We currently market this to the catering industry in 10kg tubs and our ricotta can be found on ships such as the QE2 and Queen Mary, as well as in our own Bookham Cheese & Pasta fresh ravioli range. |
