MRS. B’s FRESH RAVIOLI - a taste of Italy from the heart of Sussex…
Claire Bookham (Mrs. B for short) spent seven years living in Italy, where she soon developed a passion for simple but imaginative food prepared with genuine ingredients.
Farmers’ Markets have allowed Mrs.B, now living back in Sussex, to tap into a diverse pool of fresh, local and traceable ingredients with which to create an exciting and varied range of fresh ravioli, including classic recipes that you might usually expect to find in Italy, as well as some seasonal flavours with a slightly more British feel. Whatever your personal preference, Mrs. B’s Fresh Ravioli are perfect for every occasion, whether it be feeding the kids, impressing your friends or creating a romantic meal for two. They are both comforting and nutritious, and quick and easy to prepare. You’ll soon be sighing with contentment, whatever the occasion!

Slow-Roasted Winter Vegetable Ravioli This highly nutritious winter-warmer is a must for the whole family. Parsnips, swede, celeriac, onions, leeks and carrots are lovingly prepared and slowly roasted in the oven until golden and full of flavour. The vegetables are then blended with our creamy ricotta and Italian-style hard cheese into a heavenly puree before adding bundles of fresh herbs. The result is heart-warming and nutritious. Pecorino & Caramelised Red Onion Ravioli Scarlet red peppers and deep purple onions are roasted to perfection. Just add salty pecorino and pure white ricotta to this great mass of passionate colour and you have Dega’s Coiffure/cheese & onion ravioli. This sophisticated sounding recipe is highly suitable for posh dinner parties. Sweet Potato & Ricotta Ravioli A rich and deeply satisfying recipe with exotic undertones. Imagine a smooth, velvetine puree of golden sweet potatoes and the subtle aroma of amaretti and cinnamon. Mixed with creamy white ricotta, the result is warm and inviting. Fresh Spinach & Ricotta Ravioli Fresh local spinach makes our recipe real and authentic. We mix our own creamy ricotta with fresh marjoram in summer and just a hint of nutmeg during the winter months. It’s a pure and natural recipe and it’s made for you in Sussex. Five Cheeses Starring local celebrity cheeses from other cheese makers on the farmers' market circuit - a firm favourite in the Bookham household, as they settle down to watch a Sunday night TV drama. Roasted Asparagus & Walnut Ravioli - Seasonal: spring/summer Fresh local asparagus roasted in our own Sussex Downs butter with garlic. Combined with our creamy ricotta, fresh lemons and a few other secret (but natural) ingredients, the result is a heavenly explosion of taste. Serve with chilled white wine and love. Roasted Mediterranean Vegetable Ravioli - Seasonal: spring/summer A mediterranean blend of sun-drenched summer vegetables with locally sourced fresh basil and marjoram gently folded into creamy ricotta before adding handfuls of grated Twineham Grange Farmers' Hand cheese. Inspired by Elizabeth David. White Stilton & Cranberry - Seasonal: Christmas Glorious white stilton and fresh ruby cranberries combine to create a mouth-watering explosion of pure Christmas flavour. Don't deny yourself the pleasure. Cooking Advice: Gently simmer Mrs. B’s Fresh Ravioli in salted, boiled water for 5-7 minutes (depending on how al dente you like your pasta), drain and serve immediately with lashings of our melted South Downs Butter, some cracked black pepper and our award-winning Twineham Grange Farmers’ Hand™ Italian Style Hard Cheese. If cooking our ravioli from frozen, just add a couple of minutes onto our suggested cooking times and stir occasionally. And although our ravioli are delicious served on their own with melted butter, black pepper and cheese, you might like to serve them with one of our award-winning Pasta Sauces.
